Chocolate Zucchini Muffins

These chocolate zucchini muffins are moist, rich chocolate, and absolutely delicious. They are so easy to make and come together quickly. This zucchini muffin recipe uses an entire 2 cups of zucchini and doubles easily so it is the perfect way to use up that zucchini from your garden!

Chocolate zucchini muffins are an easy quick muffin to have for breakfast or a quick snack. Don't let the zucchini fool you, you cannot taste it and these are super rich chocolate made with cocoa powder and mini chocolate chips, therefore they also count as dessert!

Why use zucchini in muffins?

Some may ask why use zucchini in muffins or baked goods in general if you cannot taste it? It's because it adds an amazing amount of moisture and exceptional soft texture. The tenderness is unmatched in traditional muffin recipes and it doesn't compromise the flavor expectation of the muffin. You'll just have to try them and see for yourself!

Admittedly, the chocolate hides the addition of zucchini more than a traditional zucchini muffin. I made this chocolate zucchini muffin recipe super easy to follow with easy ratios to remember. If you're craving more chocolate, try these other chocolate recipes.

Ingredients for Chocolate Zucchini Muffins

  • zucchini, grated
  • all purpose flour
  • unsweetened cocoa powder
  • baking powder
  • baking soda
  • fine sea salt
  • cinnamon
  • light or dark brown sugar
  • sugar
  • large eggs
  • neutral oil
  • maple syrup - the real stuff!
  • whole milk
  • greek yogurt or sour cream
  • vanilla extract
  • mini chocolate chips

How to Make Chocolate Zucchini Muffins

Chocolate zucchini cupcakes come together with simple instructions using the wet dry method. This means we mix all of the wet ingredients together and then the dry ingredients. Honestly, the most tedious part is shredding the zucchini but with a good grater or a good processor, it comes together quickly. No need to even blot the moisture out of the shredded zucchini!

  1. Step 1: Shred the zucchini. Do not blot. Measure out 2 cups. In a separate bowl, whisk all of the dry ingredients together and set aside. Preheat the oven to 400 degrees Fahrenheit.

  1. Step 2: In a bowl, whisk together the wet ingredients including oil, eggs, sugar, brown sugar, maple syrup, zucchini, greek yogurt, milk, and vanilla extract.

  1. Step 3: Whisk in the dry ingredients into the wet ingredients until combined. Mix in the mini chocolate chips, reserving some for the top of the muffins.

  1. Step 4: Fill the muffin liners to the top and add additional mini chocolate chips on top. Reduce the oven to 375 degrees Fahrenheit. Bake in the oven for 22 minutes or until a toothpick comes out clean.

Tip: Space out the muffins in the pan to create an even higher muffin top!

Equipment Needed

To make these chocolate zucchini muffins, you will need mixing bowls, measuring cups and spoons, a large whisk, muffin liners, and a muffin pan. Because this muffin recipe makes 16 muffins, I prefer to use a 24 count muffin pan so that I can bake them all at once. I also like to use a large cookie scoop to scoop out the batter and help evenly portion out each muffin. You will also want airtight gallon ziploc bags or an airtight container to store the muffins after they are baked.

How to Store Chocolate Zucchini Muffins

Store the baked muffins in an airtight container. Mine stay moist and fresh for a few days at room temperature if stored properly. For longer storage, place in the refrigerator for up to a week or freezer for up to 1-2 months. Because these muffins are higher in moisture, it is important to store them properly to keep them fresh!

Tips for Baking the Best Muffins

  • Let the muffin batter rest 15-20 minutes before baking. This helps the dry ingredients absorb the wet ingredients and the batter will create air bubbles, aiding in the rise of the muffins.
  • Use room temperature ingredients. This is especially true for cold ingredients often used for muffins such as milk, eggs, and/or butter.
  • Measure the flour properly. Flour is the most commonly incorrectly measured ingredient in baking and using too much or too little can greatly alter the outcome of any recipe. The MOST accurate way to measure flour is to weigh it with a food scale. Most recipes will account for around 120-130 grams per 1 cup of flour. If you do not have a scale or the recipe does not specify metric measurements, use the spoon and level method! At the very least, you should ALWAYS fluff up the flour before measuring it into the measuring cups. Fluff the flour up with a utensil in the container and/or bag, then use a spoon to spoon the flour into the measuring cup until full, then take the straight edge/handle of the spoon or butter knife to level off the flour from the top of the measuring cup.
  • Avoid overmixing! Always whisk the dry ingredients in a separate bowl first and then fold the dry ingredients in gently. Some small lumps are okay! Overmixing can create a tough and/or gummy muffin by developing the gluten too much. It's important to avoid this in order to achieve that traditional moist muffin texture. . If you are using a gluten free flour 1:1 blend, then you do not need to worry about this as much.
  • Use muffin/cupcake liners!I love to use parchment paper squares as liners to make for an easy impressive way to elevate the muffins. I especially like to use these liners when adding a crumb topping like in my pumpkin banana muffins recipe because it helps contain the topping!
  • Fill the muffin liners all the way full, up to the top of the muffin pan. Muffin batter tends to be thicker and bake as a quick bread. Muffins can be filled higher than cupcakes because they are formulated differently to accommodate a higher rise for that traditional domed muffin top.
  • Preheat the oven and bake at a high temperature. Muffins need to be baked at high heat, around 400-425 degrees Fahrenheit for at least the first 5-7 minutes of baking and then reduced down to 350-375 degrees Fahrenheit to finish baking the rest of the way. Some muffins I steadily bake at 400 the entire time, while other muffins respond better to the initial rapid heat rise.
  • Use a cookie scoop or ice cream scoop to scoop the muffin batter evenly in the muffin pan. This is an easy tip to distribute the batter evenly (you could also use a scale) and helps avoid making a mess with the batter.
  • Space out the muffins in the pan for more rise. This is basically a magic trick, but I'm telling you it really helps create those big tall muffin tops! While it is not necessary at all; if you desire domed muffin tops or struggle to get your muffins to rise properly, try this tip! Filling every other muffin well and leaving the spaces inbetween empty allows for more air and heat circulation around the muffins. This allows the muffins to rise with much higher perfectly domed tops.
  • Use both baking soda and baking powder. All of my muffin recipes call for both of these ingredients. They both assist with rise, but also play a role in the texture and final outcome of the muffin.
  • When making mini muffins, use mini add ins! For example, instead of regularly sized chocolate chips, use mini chocolate chips. For any fruits or nuts, chop them first before folding into the muffin batter. Remember mini muffins also require much less time to bake!

Ingredients
  

  • 2 cups all purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 Tablespoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon fine sea salt
  • ⅓ cup neutral oil (vegetable, canola, avocado)
  • ⅓ cup brown sugar (light or dark)
  • ⅓ cup sugar
  • ⅓ cup maple syrup (the real stuff!)
  • ⅓ cup greek yogurt (or sour cream)
  • ¼ cup whole milk (or milk alternative)
  • 2 large eggs (room temperature)
  • 2 cups shredded zucchini (do not blot moisture away!)
  • 2 teaspoons vanilla extract
  • 1½ cups mini chocolate chips (reserve ½ cup for topping before baking)

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit. Line a 24 count muffin pan with 16 muffin liners.
  • Shred the zucchini with a grater or food processor. Do not overprocess into mush. You want fine shreds. Do not blot moisture. Measure out 2 cups and set aside.
  • In a bowl, whisk all of the dry ingredients together and set aside.
    2 cups all purpose flour, ½ cup unsweetened cocoa powder, 1 Tablespoon baking powder, ¼ teaspoon baking soda, ½ teaspoon ground cinnamon, ½ teaspoon fine sea salt
  • In a separate bowl, whisk together the wet ingredients including oil, eggs, sugar, brown sugar, maple syrup, zucchini, greek yogurt, milk, and vanilla extract.
    ⅓ cup neutral oil, ⅓ cup brown sugar, ⅓ cup sugar, ⅓ cup maple syrup, ⅓ cup greek yogurt, ¼ cup whole milk, 2 large eggs, 2 cups shredded zucchini, 2 teaspoons vanilla extract
  • Whisk the dry ingredients into the wet ingredients until combined. Mix in the mini chocolate chips, reserving ½ cup for the top of the muffins. Avoid overmixing.

  • Fill the muffin liners to the top and add additional mini chocolate chips on top.
  • Reduce the oven to 375 degrees Fahrenheit right after you put the muffins into the oven. Bake in the oven for 24 minutes or until a toothpick comes out clean. Let the baked muffins cool to room temperature before storing in an airtight container. Enjoy!
